Cooking, for me, is a lot like a mad science project. I very seldom know what I am doing or why I thought it was a good idea to add black beans to the tomater soup (yick). I am also, VERY interested in cooking meth….. for investment purposes inspired by a very popular television show.

However, my latest kick has been soups, most recently Tomato soup (dont worry, I will leave the black beans out of this one). I like this recipe because it is easy, CHEAP, low cal and fuggin yumz.

Ingredz:

2 carrots (if you dont like them, you cant taste them anyways in this soup)

1 white onion

2 stalks of celery

2 cups chicken broth

1/2 cup olive oil

salt and pepper to taste

2 cans of diced tomatoes

2 tablespoons of Butter

1/2 cup heavy whipping cream (if you are feeling on the fatty side)

Note: You dont HAVE to add the cream, but it does make this soup extra tasty

Directions:

Dice onion, celery, and carrots and cook them on medium heat with the olive oil for 12 minutes (until they are getting tender). Then add salt, pepper, and both cans of tomatoes. Cook on medium heat for 10-15 minutes. Add chicken broth, butter and cook for another 5 minutes. After the mixture is nice and bubbly add the cream and remove from heat. Finally, put that shiz in a food processor and voila!

Unfortunately, I don’t have a picture. But I can tell you that it is supposed to look like tomato soup…
